Ingredients:
1 acorn squash
some butter
some brown sugar
some rice (leftover white rice works fine, maybe 1-2 cups)
1 Granny Smith apple
some pecans (1/2 C? I've no idea - look, it's salad, OK? You can make stuff up. :) )

Cut squash in half (across the equator) and remove seeds. Put some butter and brown sugar in the middle (maybe 1/2 T butter and a largish spoonful of brown sugar). Microwave for 5ish minutes, until you can stab with a fork (and therefore scoop with a spoon). In the meanwhile, dice 1/2 apple and roughly chop pecans. Mix these with rice. When squash is cooked, pour butter/brown sugar into rice mixture. Scoop out squash with spoon - if you're feeling ambitious, mash up along the way or in a separate bowl. Mix all this together. Microwave for a few minutes to get things warmed through and the apples slightly cooked. Eat hot or cold. Serves 3ish?
